Le Cratère is an organic Traditional Method sparkling rosé wine made in very limited
quantities (just 940 bottles) from Syrah grapes, which are solely all grown inside the 200-metre-
wide meteorite crater from which Domaine du Météore takes its name.
These Syrah vines, were planted in two stages in 1984 and 1992. The
grapes, and the wine produced from them, taste quite unlike anything else grown in the region
or in France – the effect of Domaine du Météore’s astronomical history.

Tasting Notes
Le Cratère is pale salmon pink in colour with distinctive copper highlights. The nose is delicate with aromas of redcurrant and strawberry alongside a hint of citrus fruit and white pepper. On the palate, red fruits dominate with a beautiful finesse of the bubbles leading to a smooth and fresh taste with excellent balance and an elegant saline finish.
Technical Info
The base wine is pressed directly and the most aromatic and delicate juices are selected for controlled fermentation in stainless steel tanks.
Once the alcoholic fermentation is complete, the wine is bottled. We then add a sweet liqueur de tirage and specific yeasts for a second alcoholic fermentation in the bottle. It is during this stage that the wine becomes finely sparkling.
Finally, the bottles are racked (expulsion of the yeasts), and a liqueur is added before the final corking.

Birding Langudoc recommends that the bird boxes are securely attached to a tree 2-3 meters off the ground in a well-sheltered spot. The species that might use the box for nesting include:;
Blue Tit, Coal Tit, Marsh Tit, Great Tit and Tree Sparrow.
